Curcumin and catechin co-loaded water-in-oil-in-water emulsion and its beverage application

چکیده
Curcumin and catechin are nutraceuticals and natural health products that have shown several health benefits. However, due to their unstable nature, these compounds cannot be included in food products as such. The prime objective of the current study was to examine the formulation factors that determine the stability of these nutraceuticals and their carrier systems as well as to fabricate water-in-oil-in-water emulsions (W/O/W) to prevent the degradation of both curcumin and catechin in beverage systems. The fabricated emulsion had a volume-weighted mean diameter (d43) of ~4 μm, with an encapsulation efficiency of >90%. Encapsulating the catechin within the inner aqueous phase of the double emulsion increased the stability of catechin by >20% at 23 ± 2 °C and by >40% at 4 °C after 15 days of incubation, as compared to free catechin. In the case of curcumin, >80% was detected after incubation in the beverage system in the form of emulsions, whereas it was reduced to ~40% in the case of free curcumin. © 2015 Elsevier Ltd. Co-delivery of hydrophobic curcumin and hydrophilic catechin by a water-in-oil-in-water double emulsion.
Curcumin and catechin are naturally occurring phytochemicals with extreme sensitivity to oxidation and low bioavailability. We fabricated a water-in-oil-in-water (W/O/W) double emulsion encapsulating hydrophilic catechin and hydrophobic curcumin simultaneously. The co-loaded emulsion was fabricated using a two-step emulsification method, and its physicochemical properties were characterised. Vo...
متن کاملEffective Factors on the Stability of Oil-in-Water Emulsion Based Beverage: A Review
Beverage emulsions are systems that are composed of two liquids including oil and water which are prepared by homogenizing oil phase in an acidic aqueous phase. They must be stable in both concentrated and diluted form for a period of 6-12 months upon standing at room temperature. Two immiscible phases contained systems are thermodynamically unsta-ble. In other words, they are vulnerable to bre...

متن کاملTransdermal Delivery of Desmopressin Acetate from Water-in- Oil Nano/submicron Emulsion Systems
Desmopressin acetate is a potent synthetic peptide hormone. A more acceptable route of Desmopressin acetate is a potent synthetic peptide hormone. That is administered via parenteral, intranasal, and oral routes. A more acceptable route of administration with potentially good bioavailability could be offered by transdermal delivery. The present work reports on the development of water-in-oil (w...
